I love the combined sweetness and saltiness of a good peanut sauce and turkey.
|1 cup||leftover turkey, sliced and de-boned|
|2 cups||cooked white rice|
|2/3 cup||red bell pepper, chopped|
|1/2 cup||smooth peanut butter|
|2 tbsp||lite soy sauce|
|2 tsp||brown sugar|
|1/2 tsp||minced ginger|
|1/4 cup||warm water|
|1 tsp||sesame oil|
|2 tbsp||crushed peanuts (optional)|
Prepare rice as per package directions (typically 1 cup of uncooked rice will yield two cups of cooked rice).
Meanwhile, in a medium bow, whisk together peanut butter, soy sauce, sugar, ginger, water, and sesame oil until smooth.
In a microwave safe container, heat turkey for 40 seconds on high.
Divide the rice between two plates (1 cup of rice per plate). Top with half of the turkey (1/2 cup), peppers (1/3 cup), and half of the peanut sauce.
Microwave for another 40-50 seconds until dish is warm throughout.
Top with optional crushed peanuts if desired.
You can prepare this sauce in advance, as it keeps well in the fridge.
