2 tbsp (30 mL) Vegetable oil, divided
2 Maple Leaf Prime Naturally® Portions Stir Fry Chicken breasts
Salt and pepper
1 Small onion, sliced
2 cups (500 mL) Broccoli florets
1 Red pepper, sliced
1/3 cup (80 mL) Ready prepared Thai peanut sauce


HEAT 1 tbsp (15 mL) vegetable oil in a large skillet or wok over medium-high. Add chicken; season with salt and pepper. Stir-fry for 8-10 minutes or until golden brown. Remove chicken from the pan using a slotted spoon and set aside.

ADD remaining oil to the pan if needed. Toss in onions, broccoli and peppers; stir-fry for 5-6 minutes or until tender crisp. Return chicken to the pan and cook for 1-2 minutes or until chicken is cooked to an internal temperature of 165°F (74°C). Pour peanut sauce over the mixture and stir to combine. Serve over noodles or steamed rice.


To make your own peanut sauce, combine 5 tbsp (75 ml) smooth peanut butter, 3 tbsp (45 mL) warm water, 1 ½ tbsp (22 mL) rice vinegar, 2 tbsp (30 mL) soy sauce and 3 tbsp (45 mL) honey or sugar. Whisk to combine.
