This is so easy and delicious using instant rice smothered with peanutty chicken and broccoli.
|1 tbsp||(15 mL) Vegetable oil|
|1||Onion, thinly sliced|
|4 cups||(1 L) Broccoli florets|
|2||Cloves garlic, minced|
|1 Pkg||(400 g) Maple Leaf® Prime® Fully Cooked and Sliced Chicken Breast Strips|
|1-1/2 cups||(375 mL) Thai peanut stir fry sauce or Pad Thai sauce|
|4 cups||(1 L) Prepared instant rice, for serving|
|1/4 cup||(60 mL) Chopped peanuts|
|1||Thinly sliced red chili pepper (optional)|
HEAT oil in a large skillet or wok over medium-high. Add onions and broccoli and stir-fry for 5-6 minutes or until tender crisp. Add garlic and chicken strips. Pour in sauce and stir-fry to combine and heat.
SERVE over hot instant rice. Sprinkle with peanuts and chillies if using.
