Thai Peanut Chicken and Broccoli Stir Fry

About this Recipe

This is so easy and delicious using instant rice smothered with peanutty chicken and broccoli.

Ingredients

1 tbsp (15 mL) Vegetable oil
1 Onion, thinly sliced
4 cups (1 L) Broccoli florets
2 Cloves garlic, minced
1 Pkg (400 g) Maple Leaf® Prime® Fully Cooked and Sliced Chicken Breast Strips
1-1/2 cups (375 mL) Thai peanut stir fry sauce or Pad Thai sauce
4 cups (1 L) Prepared instant rice, for serving
1/4 cup (60 mL) Chopped peanuts
1 Thinly sliced red chili pepper (optional)

Directions

HEAT oil in a large skillet or wok over medium-high. Add onions and broccoli and stir-fry for 5-6 minutes or until tender crisp. Add garlic and chicken strips. Pour in sauce and stir-fry to combine and heat.

SERVE over hot instant rice. Sprinkle with peanuts and chillies if using.
