Traditional Thai street food right off your grill. Tender chicken sticks dipped in authentic Thai style dipping sauce.


3 tbsp (45 mL) Honey
¼ cup (60 mL) Vegetable oil
½ tsp (2 mL) Ground coriander
¼ tsp (1 mL) Cayenne
¼ cup (60 mL) Lemon juice
2 tbsp (30 mL) Soy sauce
2 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
Salt and pepper
Wooden or metal skewers
Fresh cilantro to garnish
1 (400 mL) Can coconut milk
1 tsp (5 mL) Chili Flakes
½ tsp (2 mL) Caraway seeds
½ tsp (2 mL) Ground ginger
½ tsp (2 mL) Ground coriander
4 Cloves garlic, minced
¼ tsp (1 mL) Salt
¼ cup (60 mL) Peanut butter


WHISK first six ingredients together in a large bowl. Set aside. CUT chicken into 1 inch (2.5 cm) wide strips and season with salt and pepper. Add to marinade mixture, cover and refrigerate at least 30 minutes. PREPARE sauce by placing coconut milk, chili flakes, caraway seeds, ginger, coriander, garlic and salt in a small saucepan and bringing to a boil. Remove from heat and allow to rest for 15 minutes. Stir peanut butter into the sauce and return to stove. Simmer until the sauce thickens slightly, about 5 minutes. PREHEAT BBQ to medium-high heat and lightly spray with non-stick cooking spray. REMOVE chicken from marinade and thread onto skewers. Grill for 2-3 minutes per side or until internal temperature reaches 165°F (74°C). Serve with peanut dipping sauce and sprinkled with cilantro.
