Crunchy and full of flavour this yummy Thai chicken slaw is good enough to eat on its own. Wrapped up in a lunchbox friendly tortilla it’s even better.
|¾ cup||(175 mL) Prepared Thai peanut sauce, divided|
|4||Dempster’s® Original Large Tortillas|
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked and chopped|
|1/3 cup||(75 mL) Thinly sliced green onion|
|1/3 cup||(75 mL) Diced red pepper|
|2 cups||(500 mL) Prepared coleslaw mix|
|¼ cup||(60 mL) Chopped fresh cilantro|
|1/3 cup||(75 mL) Toasted slivered almonds, optional|
SPREAD 1 tbsp (15 mL) peanut sauce over each tortilla. COMBINE chicken, green onion, red pepper, coleslaw mix, cilantro and almonds with remaining peanut sauce. Spoon mixture evenly over the bottom third of each tortilla. Fold tortilla over salad, fold in the sides and continue to roll up as tight as possible. Wrap in plastic wrap or wax paper and chill for 30 minutes. Cut in half diagonally and serve.
