|1 tbsp||(15 mL) Vegetable oil|
|1 tsp||(5 mL) Chili powder|
|1 tsp||(5 mL) Oregano|
|1/2 tsp||(2 mL) Cumin|
|1||Red pepper, chopped|
|1||Green pepper, chopped|
|1||(14 oz) Can diced tomatoes|
|3/4 cup||(175 mL) Converted rice|
|1/4 cup||(60 mL) Chopped fresh cilantro|
|Salt and pepper|
HEAT oil in a large non-stick skillet over medium-high. Add chicken and sauté for 2-3 minutes per side. Remove from the pan and set aside.
ADD onion and seasoning to the same pan. Cook until the onion is soft. Add peppers, tomatoes and rice to the pan. Nestle the chicken in the liquid, bring to a boil then reduce the heat and simmer for 25-30 minutes or until the rice is cooked and the internal temperature of the chicken reaches 165°F (74°C). Season to taste with salt and pepper. Garnish with fresh cilantro and serve.
