This is a perfect make ahead dish for a winter gathering. We always prefer it served the next day anyway.


1.5 kg ground beef
1.5 kg sausage (casings removed)
1 large onion diced
1 large pepper (any colour) diced
2 cans tomato paste
1 can (796ml) diced tomatos
1 tsp crushed dried red chilli peppers
1/2 tsp chipotle chilli spice
1/2 tsp cayenne pepper
2 tbsp chilli powder
1 Pkg Dempsters tortillas
2 tbsp melted butter
1/2 tsp minced garlic
2 cups grated cheddar


Brown ground beef and sausage in a large pot on medium heat, stirring and turning often, Add onions and peppers, and continue to simmer until onions begin to clear. Add spices, tomato paste and tomatos and simmer on med low for 1 hr.
Add garlic to butter and brush onto tortillas on both sides. Cut into points and place on a baking tray. Broil on high in oven for about 5 min until golden. Turn them and brown the other side.
Top each bowl of chilli with grated cheddar and serve with golden tortillas for dipping


This is best made ahead and served the next day. Great for any winter party!
