I created this recipe because of our constant abundance of 1/2 avocados in our house. This sandwich has a nice southwest flavour, without being too spicy in the morning. We prefer our yolks runny, but for a less messy version, cook the egg till the yolk is hard.
|1||Dempster's English Muffin, toasted|
|1 tbsp||canola oil|
|1/4 cup||mixed sweet peppers and onion, sliced|
|1 tbsp||shredded cheese|
|1/8 tsp||taco or fajita seasoning|
In a small frying pan, heat oil and fry peppers and onions till softened. Place on a plate, toss with taco seasoning and set aside. Return pan to stove and re-heat remaining oil to fry the egg to your desire. Meanwhile, toast the Dempster's English Muffin and slice avocado.
To assemble, spread salsa on bottom half of English muffin. Top with avocado slices, egg, shredded cheese and pepper mixture.
