2 tbsp (30 mL) Vegetable oil, divided
2 Maple Leaf Prime Naturally® Portions Stir Fry Chicken breasts
Salt and pepper
2 Medium carrots, peeled and sliced into rounds
4 cups (1 L) Baby bok choy, halved
1 Yellow pepper, cut into 1” (2.5 cm) pieces
1/3 cup (80 mL) Ready prepared teriyaki sauce


HEAT 1 tbsp (15 mL) vegetable oil in a large skillet or wok over medium-high. Add chicken; season with salt and pepper. Stir-fry for 8-10 minutes or until golden brown. Remove chicken from the pan using a slotted spoon and set aside.

ADD remaining oil to the pan if needed. Toss in carrots, bok choy and peppers; stir-fry for 5-6 minutes or until tender crisp. Return chicken to the pan and cook for 1-2 minutes or until chicken is cooked to an internal temperature of 165°F (74°C). Pour teriyaki sauce over the mixture and stir to combine. Serve over noodles or steamed rice.


To make your own teriyaki sauce, combine ½ cup (125 mL) soy sauce, ¼ cup (60 mL) brown sugar, 1 clove garlic, minced, and 1 tsp (5 mL) ground ginger. Whisk to combine.
