Capturing authentic Italian flavours, tasty Bruschetta Toast is all dressed up for your picnic.
|6||Slices Dempsters WholeGrains bread|
|7||ripe plum tomatoes|
|2||cloves of garlic minced|
|2 tbsp||extra virgin olive oil|
|1 tsp||balsamic vinegar|
|8||fresh basil leaves, chopped|
|Salt and freshly ground black pepper to taste|
|1||green pepper, sliced into two halves|
Parboil the tomatoes for one minute in boiling water that has just been removed from the burner. Drain. Using a sharp small knife, remove the skins of the tomatoes. Cut them in halves or quarters and remove the seeds and juice from their centers. Also cut out and discard the stem area.
Finely chop up the tomatoes. Put tomatoes, garlic, 1 Tbsp extra virgin olive oil, vinegar into a bowl and mix. Add the chopped basil. Add salt and pepper to taste.
Remove seeds from green pepper halves, and fill each half with Bruschetta.
Toast Dempsters WholeGrains bread, and drizzle a little olive oil on each piece. Cut each piece in half or into triangles, and serve.
