|1||(500g) Maple Leaf® Sausage Meat|
|1/2||Red pepper, sliced|
|1/2||Yellow or orange pepper, sliced|
|2||Cloves garlic, minced|
|Pinch of chili flakes (optional)|
|2||Medium cooked potatoes, diced|
|1/3 cup||(80 mL) Grated Parmesan cheese|
|1||(8 oz/227 g) Container ready prepared bruschetta|
|1/2 cup||(125 L) Sour cream|
PREHEAT oven to 350°F (180°C). Wrap tortillas in foil and place in preheated oven for ten minutes to warm while preparing the filling.
HEAT a large skillet over medium-high heat. Add sausage and cook, breaking up with the back of a wooden spoon for 8-10 minutes. Add onion, peppers and garlic. Cook for 2-3 minutes or until onions have softened. Sprinkle in chilli flakes if using. Add potatoes and continue to cook tossing gently until potatoes begin to crisp, about 3-5 minutes. Sprinkle with chopped parsley and serve wrapped in warm tortillas. Garnish with a generous spoonful of bruschetta and a dollop of sour cream.
