4 Dempster’s® Whole Wheat Small Tortillas
1 (500g) Maple Leaf® Sausage Meat
1/2 Onion, sliced
1/2 Red pepper, sliced
1/2 Yellow or orange pepper, sliced
2 Cloves garlic, minced
Pinch of chili flakes (optional)
2 Medium cooked potatoes, diced
1/3 cup (80 mL) Grated Parmesan cheese
1 (8 oz/227 g) Container ready prepared bruschetta
1/2 cup (125 L) Sour cream


PREHEAT oven to 350°F (180°C). Wrap tortillas in foil and place in preheated oven for ten minutes to warm while preparing the filling.

HEAT a large skillet over medium-high heat. Add sausage and cook, breaking up with the back of a wooden spoon for 8-10 minutes. Add onion, peppers and garlic. Cook for 2-3 minutes or until onions have softened. Sprinkle in chilli flakes if using. Add potatoes and continue to cook tossing gently until potatoes begin to crisp, about 3-5 minutes. Sprinkle with chopped parsley and serve wrapped in warm tortillas. Garnish with a generous spoonful of bruschetta and a dollop of sour cream.
