Delicious, tender chicken morsels and vegetables coated in sweet and spicy Thai sauce. Choose your favourite stir-fry vegetables!
|2 cups||(500 mL) Instant brown rice|
|2 tbsp||(30 mL) Vegetable oil|
|2||Cloves garlic, minced|
|4 cups||(1 L) Assorted stir-fry vegetables|
|2 tbsp||(30 mL) Red Thai curry paste|
|1 cup||(250 mL) Prepared Thai style peanut sauce|
|1||(400 g) Package Maple Leaf® Prime® Fully Cooked and Sliced Chicken Breast Strips – Sweet Thai Chili|
COOK instant rice according to package directions. Set aside and keep warm.
HEAT oil in a large skillet or wok over medium-high. Add garlic and cook for about 1 minute or until soft and fragrant. Add vegetables and sauté for 2-3 minutes or until tender crisp. Stir in Thai curry paste and peanut sauce. Add chicken and toss to coat. Season with salt and pepper and serve over brown rice.
