|4||Small sweet potatoes|
|2 tbsp||(30 mL) Olive oil|
|Coarse sea salt|
|3-4 oz||(85-115 g) Grated Cheddar cheese|
|2 tsp||(10 mL) Cajun spice|
|5||Slices Maple Leaf® Natural Selections® Bacon, cooked and crumbled|
|1/4 cup||(60 mL) Chopped green onions|
|1/4 cup||(60 mL) Plain Greek yogurt or sour cream|
PREHEAT oven to 400°F (200°C).
CUT potatoes in half lengthwise and place cut side up on a non-stick baking sheet. Bake for 30-40 minutes or until tender. Remove from the oven and let cool. When cool enough to handle, scoop out the sweet potato flesh, leaving just enough remaining to hold the skin together. Reserve the flesh for another use.
ARRANGE the potatoes, cut-side down on a baking sheet and brush with oil. Sprinkle with sea salt to taste and bake for 10 minutes. Turn over and brush the inside with oil and sprinkle with Cajun spice. Bake for another 10-15 minutes or until crisp. Remove from the oven and top with cheese and bacon. Return to the oven for 2-3 minutes or until the cheese is melted. Top each with a sprinkle of green onion and a dollop of yogurt or sour cream.
