These Sweet Potato Coins are the simplest way to make a savoury side your whole family will love!
|1||Large sweet potato|
|1 tsp||(5 mL) Soft butter|
|1 tbsp||(15 mL) Brown sugar|
|.25 tsp||(1 mL) Cinnamon|
|.25 tsp||(1 mL) Nutmeg|
PEEL and slice potato crosswise into 1/8-inch (3 mm) slices.
ARRANGE slices, slightly overlapping, in a small glass pie plate or shallow microwaveable dish. Cover with microwave-safe plastic wrap, venting one corner. Microwave on HIGH for 1 to 2 minutes.
COMBINE sugar and spices. Remove cover from sweet potato, sprinkle with sugar mixture and dot with butter.
MICROWAVE uncovered for an additional 1 to 2 minutes or until potato is cooked.
