Delicious chicken parcels drizzled with lime and cooked to perfection!


2 Maple Leaf Prime Naturally® Chicken Breast Portions
Salt and pepper
3 cups (750 mL) Roughly chopped bok choy
1 cup (250 mL) Snow peas
1/2 Red pepper, thinly sliced
2 tbsp (30 mL) Cilantro stems
2 tbsp (30 mL) Cilantro leaves
1 tsp Fish sauce
1 tsp Soy sauce
1 tsp Rice vinegar
2 tbsp Sweet Thai chili sauce
1 tsp Lime zest
1 tbsp Lime juice
1 tbsp Green curry paste


PREHEAT oven to 375°F (190°C).

SEASON the chicken on both sides with salt and pepper.

PLACE two – 12x12” (30x30 cm) pieces of parchment paper on a baking tray. Divide the bok choy, snap peas, peppers and cilantro stems between the two sheets of parchment paper and top each with a chicken breast.

COMBINE all of the ingredients for the sauce and drizzle over each chicken breast making a pouch with the parchment paper to prevent the sauce from escaping. Fold the edges of the parchment paper into a parcel and bake for about 25-30 minutes or until the chicken is cooked through to 165°F (74°C). Serve over ready prepared basmati rice. Sprinkle with fresh chopped cilantro leaves.
