|2||Maple Leaf Prime Naturally® Chicken Breast Portions|
|Salt and pepper|
|3 cups||(750 mL) Roughly chopped bok choy|
|1 cup||(250 mL) Snow peas|
|1/2||Red pepper, thinly sliced|
|2 tbsp||(30 mL) Cilantro stems|
|2 tbsp||(30 mL) Cilantro leaves|
|1 tsp||Fish sauce|
|1 tsp||Soy sauce|
|1 tsp||Rice vinegar|
|2 tbsp||Sweet Thai chili sauce|
|1 tsp||Lime zest|
|1 tbsp||Lime juice|
|1 tbsp||Green curry paste|
PREHEAT oven to 375°F (190°C).
SEASON the chicken on both sides with salt and pepper.
PLACE two – 12x12” (30x30 cm) pieces of parchment paper on a baking tray. Divide the bok choy, snap peas, peppers and cilantro stems between the two sheets of parchment paper and top each with a chicken breast.
COMBINE all of the ingredients for the sauce and drizzle over each chicken breast making a pouch with the parchment paper to prevent the sauce from escaping. Fold the edges of the parchment paper into a parcel and bake for about 25-30 minutes or until the chicken is cooked through to 165°F (74°C). Serve over ready prepared basmati rice. Sprinkle with fresh chopped cilantro leaves.
