Spicy sweet homemade pepper jelly coats tender bites of chicken breast. A great appetizer for any occasion.
|SWEET STICKY SAUCE:|
|1||Orange pepper, finely diced|
|1||Red pepper, finely diced|
|1||Chili pepper, finely diced|
|1 cup||(250 mL) Cider vinegar|
|2 cups||(500 ml) Sugar|
|.5 cup||(125 mL) Water|
|Zest of 1 lime|
|.25 cup||(60 mL) Vegetable oil|
|.25 cup||(60 mL) Lime juice|
|2 tbsp||(30 mL) Honey|
|2||Cloves garlic, minced|
|1||Chili pepper, seeded and minced|
|1 tsp||(5 mL) Lime zest|
|4||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into bite size pieces|
|Lime wedges to garnish|
COMBINE all ingredients for sweet sticky sauce in a small pot. Bring to a boil. Reduce heat and gently simmer for 1 hour or until thickened to a syrupy consistency. Set aside to cool.
COMBINE chicken bite ingredients, except chicken and lime wedges in a shallow bowl. Add chicken, cover and marinate in refrigerator for at least 30 minutes.
HEAT a large skillet over high heat. Add chicken, stir-fry for about 6 to 8 minutes or until internal temperature reaches 165°F (74°C).
TOSS chicken bites in sticky sauce and serve on toothpicks. Garnish with lime wedges.
