An unexpected way to utilize English Muffins!


1 english muffin
2 strips turkey or chicken bacon
1/2 tsp of vanilla
a pinch of cinnamon
1 egg
sprinkle of icing sugar
1 tbsp real maple syrup
1 tbsp butter
dash of salt


Cut the English Muffin in half. WIth a fork, poke holes in each side (so that the egg mixture can soak through). Set aside..
In a bowl, whisk together egg, a splash of milk, vanilla, cinnamon, and salt.
In a shallow dish, pour the egg milk mixture over English Muffin halves. Let sit for 5 minutes.

In a small pan, cook bacon 2 1/2 minutes on each side.

Heat up butter in another pan. Once pan is hot, place halves in the pan and cook over medium high until done. Approximately 5 minutes.

Place one half on a plate and layer with chicken bacon. Put the top on.. Drizzle with maple syrup and top with sprinkling of icing sugar.
