Sweet and Healthy Roast Chicken Salad

A colourful salad all dressed up is a sweet, yummy and happy meal in my family and perfect for school lunches too!

Ingredients

1 Maple Leaf Prime Naturally Boneless and Skinless Chicken Breast
225 g romaine lettuce
½ cup of canned variety corn
8 grape tomatoes
¼ cup shredded mozzarella cheese
1 tsp honey
Pinch salt and black pepper

Directions

Cut chicken breast into ¾ inch cubes. Stir together honey and salt and black pepper in a small mixing bowl. Add chicken to sauce then toss to coat. Arrange chicken on baking sheet in one layer. Bake for 12 – 17 minutes. Cut romaine lettuce into bit size pieces. Arrange lettuce on plate. Add cheese, chicken, corn, and tomatoes. Add salt and black pepper to taste. Enjoy!

Notes

You can also use your delicious left over turkey for this recipe!
