1 Focaccia loaf
1 (6oz/170 g) Jar olive paste or tapenade
1 (150 g) Package Maple Leaf® Natural Selections® Oven Roasted Chicken Strips
(225 g) Roasted red peppers
1 Bunch arugula, washed and trimmed
4 Slices prosciutto ham, roughly chopped
(125 g) Sliced Fontina or Fruilano cheese


CUT focaccia in half lengthwise. Spread both sides with olive paste or tapenade. On the bottom half, arrange the chicken strips, roasted red pepper, arugula, prosciutto and cheese. Top with the other half of the focaccia.

WRAP the sandwich tightly in plastic wrap and refrigerate for 2-3 hours before serving.
