|1 tbsp||(15 mL) Vegetable oil|
|1||Onion, finely chopped|
|1||Clove garlic, minced|
|2 cups||(500 mL) Frozen vegetables|
|1 cup||(250 mL) Tomato sauce|
|1/2 tsp||(2 mL) Salt|
|1/2 tsp||(2 mL) Pepper|
|1||Package instant mashed potatoes|
|1 cup||(250 mL) Grated Cheddar cheese|
PREHEAT oven to 375°F (190°C).
HEAT oil in a large skillet over medium-high. Add turkey and cook, breaking apart with the back of a wooden spoon until lightly browned. Add onion and garlic and continue to cook for another 1-2 minutes or until the onions are soft and fragrant. Add vegetables, tomato sauce, salt and pepper. Bring the mixture to a boil then reduce heat and simmer for 10 minutes.
PREPARE the instant mashed potatoes according to the package directions. Stir in cheese.
ASSEMBLE by placing the turkey mixture in the bottom of a lightly greased - 8” (2L) baking dish. Top with the potato and cheese mixture.
BAKE for 15-20 minutes or until the potatoes are lightly browned.
