I love chocolate. Especially when it's in rich, gooey, fudgey, baked brownies. This brownie recipe is what I use when I want to use up left-over baking items like candy bar pieces.


5.33 oz salted butter
7 oz bitter sweet chocolate
5 oz semi-sweet chocolate
1.5 cups granulated sugar
1 tsp vanilla bean paste
4 eggs
1 cup all purpose flour
1 tsp salt
5 oz semi-sweet chocolate
2/3 cup whipping cream
1 cup chopped chocolate covered candy bar pieces eg rolo or oh henry or peanut butter cups


Instructions – BROWNIES

Melt the butter together with the chocolate in a saucepan over low heat. Let cool for 10 minutes.

Whisk in the sugar and the vanilla bean paste. Whisk in the eggs, one at a time, blending completely between additions.

Switch to a wooden spoon and stir in the flour and salt.

Spread batter in a 13 x 9 inch parchment lined pan and bake at 350 degrees for 30 minutes, or until a toothpick inserted in the centre come out with only a few crumbs.

Let cool in pan on rack.

Instructions – TOPPING

Place chocolate in a heat proof bowl.

In a saucepan, bring cream to boil. Pour over chocolate and whisk until smooth.

Let cool for 3 minutes then pour over brownies and spread.

Top with chopped candy bar(s).


Nuts or dried fruit can also be incorporated into the batter before baking.
