Use a white serving platter to best show and contrast the bold, vibrant colours of the Mango Relish. Use sunset-coloured sauce bowls and napkins.
Prepare the Mango Relish ahead of time, so you don't miss any action on Game Day. This recipe makes a hearty, healthy sandwich, and can be enjoyed whether you are tailgating or preparing it from the comfort of your kitchen.
|1.5 cups||Ripe, peeled, diced mango|
|1 cup||Diced, peeled cucumber|
|.5 cup||Diced tomato|
|.25 cup||Chopped green onion|
|.25 cup||Diced sweet red pepper|
|.5 tsp||Onion powder|
|.5 tsp||Garlic powder|
|1 tbsp||Lime juice|
|2 tbsp||Vegetable oil|
|.5 tsp||Ground Cumin (optional)|
|1 tbsp||Finely chopped cilantro (optional)|
|4||Sausage or Hot Dog Buns|
In bowl, combine mango, cucumber, tomato, green onion, red pepper, onion and garlic powders, and salt to taste. Stir in lime juice, honey, oil, cumin and cilantro. (For best flavour, refrigerate in an airtight container for up to 24 hours before using, and drain before serving).
Place sausages on greased grill over medium heat, cover and grill until lightly browned and cooked through.
Toast Sausage Buns if desired. Place sausage on bun. Top each with 1/4 cup (50 mL) Mango Relish.
