A very simple fried egg sandwich but oh so good with the egg yolk runneth over into the nooks and crannies of the muffin.


1 English muffin
1 egg
3 tsp butter or margarine


1. Lightly toast the two halves of the muffin and then spread 1 tsp. of butter onto each half.
2. In a small frying pan, melt 1 tsp. of butter on medium heat and break the egg in the pan. Cook for about 2 minutes or more until the yolk is "jiggly". Cover with a lid if necessary to cook to your liking.
3. Using a spatula, carefully place the egg on top of one half of muffin and sandwich with the other half. Enjoy with lots of napkins.
