This healthy sandwich will satisfy your breakfast hunger with a delicious sunny side up free range egg, fresh organic spinach, and sauteed mushrooms, red pepper, and onion on a toasted tasty Dempster's English muffin.

1 | free range egg |
2 tsp | olive oil |
2 tsp | butter |
5 | washed and dried fresh organic spinach leaves |
3 | thin slices of organic red pepper |
2 | mushrooms sliced |
1/4 cup | sliced onion |
1 | pinch salt |
1 | turn of a pepper mill |
Toast Dempster's English muffin halves. Heat 1 tsp olive in fry pan, cook egg until sunny side up. Slice up the vegetables. Saute all of the vegetables in 1 tsp of olive oil and salt and pepper until onion is translucent. Butter both inside halves of the toasted Dempster's English muffin.
