This healthy sandwich will satisfy your breakfast hunger with a delicious sunny side up free range egg, fresh organic spinach, and sauteed mushrooms, red pepper, and onion on a toasted tasty Dempster's English muffin.


1 Dempster's English muffin-toasted
1 free range egg
2 tsp olive oil
2 tsp butter
5 washed and dried fresh organic spinach leaves
3 thin slices of organic red pepper
2 mushrooms sliced
1/4 cup sliced onion
1 pinch salt
1 turn of a pepper mill


Toast Dempster's English muffin halves. Heat 1 tsp olive in fry pan, cook egg until sunny side up. Slice up the vegetables. Saute all of the vegetables in 1 tsp of olive oil and salt and pepper until onion is translucent. Butter both inside halves of the toasted Dempster's English muffin. Build the Sunny Mushroom Medley Breakfast Sandwich: Bottom half toasted English muffin, spinach leaves, mushroom medley vegetable mix, sunny side up egg, top half English muffin. Enjoy!
