Sundried Tomato Pesto and Sausage Orecchiette

Ingredients

4 Schneiders® Original Grill’ems Sausages, sliced into ½ inch pieces
1 (212 mL) container sundried tomato pesto
1 (796 mL) jar good quality pasta sauce
8 oz mixed mushrooms, sliced
1/2 cup (125 mL) red wine
1 tbsp (15 mL) olive oil
1/2 lbs orecchiette pasta, cooked and drained
Salt
Pepper
Parsley

Directions

HEAT olive oil in a large skillet.

COOK sausages and mushrooms for about 5 to 6 minutes.

MIXTURE should be golden brown.

POUR in wine and allow to reduce, about 2 to 3 minutes.

STIR in pesto and pour in pasta sauce.

STIR well. Season with salt and pepper.

ALLOW to simmer for about 5 minutes.

ADD in pasta and toss well to coat.

HEAT through.

GARNISH with fresh parsley.

Notes

Serve with fresh bread and a small green salad
