Turkey dinner in minutes! All the flavours of a festive dinner rolled into these wonderful little parcels.
|1 Pkg||Maple Leaf Prime Naturally® Turkey Scaloppini Rolls|
|Salt and pepper|
|3/4 cup||(175 mL) Ready prepared stuffing mix|
|2 tbsp||(30 mL) Butter, divided|
|2 tbsp||(30 mL) Olive oil, divided|
|1/4 cup||(60 mL) Finely diced onion|
|1/2 cup||(125 mL) Cranberry sauce|
|2-3 tbsp||(30-45 mL) Chicken broth or water|
|1 tsp||(5 mL) Chopped fresh herbs|
PREHEAT oven to 375°F (190°C).
SEASON turkey scaloppini with salt and pepper on both sides. Lay scaloppini flat on a cutting board and place ¼ cup (60 mL) of stuffing mix in the centre of each. Gently roll to enclose the stuffing. Secure with a toothpick or string.
HEAT half the butter and olive oil in a medium skillet over medium-high. Sear the turkey on all sides for about 1-2 minutes per side or until golden brown. Transfer to a small ovenproof casserole or pie plate.
HEAT remaining oil and butter in the same pan. Add onion and sauté for 1-2 minutes. Stir in cranberry sauce and broth or water. Season with herbs, salt and pepper. Pour the sauce into the casserole with the turkey, nestling the turkey in the sauce. Bake for 10 minutes or until cooked through and the internal temperature reaches 165°F (74°C).
SERVE with mashed potatoes and your favourite vegetable.
