An easier way to enjoy the flavours of stuffed peppers!


3 cup cooked brown rice
1 lb ground turkey
1 onion, diced
1 tbsp olive oil
3 peppers, diced
1 cup salsa
1 cup primavera or marinara sauce
1 tsp hot sauce (optional)
1.5 cup shredded cheddar cheese
non-stick cooking spray


Prepare rice as per package directions.
Pre-heat oven to 350.
Spray 2 oven-proof 1.5-2L casserole dishes with non-stick cooking spray.
In a large frying pan over medium-high heat, heat olive oil. Add turkey and onions, cooking until the turkey is no longer pink. Break up any large pieces while cooking.
Add diced peppers, and cook for another 5 minutes.
Add salsa, primavera/marinara sauce, hot sauce, and 3/4 cup of cheddar cheese. Stir well until cheese is melted and well mixed.
Add rice, stir again until well mixed.
Divide evenly between two casserole dishes. Top with remaining cheese.
Cook for 25min until cheese is bumbling.


You can make this as spicy as you want, depending on the hot sauce you choose.
