A quick and simple meal idea for 1!


1 Chicken Breast
1 tbsp Goat Cheese
Pinch of Rosemary
1 tbsp salt
1 tbsp ground pepper
Pinch of thyme
1/2 Small bag of mini yellow potatoes
1/3 Batch of Asaparagus
60 ml Olive oil


Preheat oven to 375C.

Gently slice chicken breast in half. Place goat cheese inside the chicken breast. Season chicken with thyme, salt, ground pepper and rosemary.

Chop mini yellow potatoes into small slices and place in a mixing bowl. Power some olive oil, salt and pepper into a mixing bowl. Once potatoes are evenly covered and seasoned, place on a baking street with aluminum foil.

Place chicken and potatoes into oven for 30 minutes.

Grab a frying pan and heat with olive oil. Chop asparagus in half and put onto pan once it has been heated up. Season asparagus with salt and pepper and a bit more olive oil. Fry until complete, making sure to keep flipping the asparagus.
