|3 cups||soft bread crumbs|
|1||medium onion, finely chopped|
|1/2 cup||finely chopped celery|
|1 tsp||Newfoundland savoury|
|2 tbsp||melted butter|
|1/4 tsp||garlic powder (optional)|
|4||slices Sunrise bologna - 1 inch thick|
|1 tbsp||vegetable oil|
|Spicy salsa for garnish|
|Salt and Pepper to taste|
|Wooden Toothpicks (for assembly)|
Preheat oven to 350°F. Line a cookie sheet with parchment.
For stuffing, combine all ingredients except bologna and oil. Season to taste.
Using a sharp knife, cut a pocket going nearly all the way through bologna slices but leaving sides intact and an opening big enough (1-inch) to insert stuffing. Insert about ⅓ cup stuffing in each bologna pocket. Push filling as far as you can into pocket away from opening. If opening is a little large, secure with toothpicks.
In a skillet over medium heat, sear bologna on both sides in oil until lightly browned. Transfer stuffed bologna to cookie sheet and bake for approximately 15 minutes on each side. Garnish with spicy salsa and serve with your favourite vegetable.
