A fresh spring or summer salad. The crunchy croutons compliment the creaminess of the cheese and the freshness of the greens!

Ingredients

CROUTONS:
8 Slices Dempsters® WholeGrains™ 12 Grain Bread, cut into 1 inch (2.5 cm) cubes
1 tsp (5 mL) Italian seasoning
1/4 cup (60 mL) Olive oil
Salt and pepper
DRESSING:
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) Honey
1 Clove garlic, minced
3 tbsp (45 mL) White balsamic vinegar
3/4 cup (175 mL) Olive oil
Salt and pepper
SALAD:
8 cups (2 L) Mixed baby greens
2 cups (500 mL) Sliced strawberries
1/3 cup (80 mL) Crumbled goat cheese

Directions

CROUTONS:
PREHEAT oven to 375˚F (190˚C). Place bread in a large bowl. Drizzle with olive oil. Sprinkle with salt and pepper and toss to coat. Spread onto a baking sheet and bake in preheated oven for 15 minutes or until crisp and golden brown. Remove from oven and cool.

DRESSING & SALAD:
WHISK together all ingredients for the salad dressing and set aside.

TOSS baby greens, strawberries and goat cheese in a large bowl with the croutons. Drizzle with salad dressing just before serving.

Notes

Use your favourite seasonal fruit in place of strawberries.
