Highly addictive stir-fried chicken and peanuts, complex sauce of salty, sweet, sour.
1 lb | Maple Leaf Prime Naturally® Portions™: Boneless Skinless Chicken Breast cut into 1-inch cubes |
2 tbsp | soy sauce |
2 tsp | cornstarch |
1 tsp | hoisin sauce |
2 tsp | sugar |
2 tbsp | vegetable oil |
3 | scallions thinly sliced separate the white from the green |
2 | garlic cloves minced |
1 tsp | minced fresh ginger |
1/4 cup | green pepper sliced |
1/4 cup | unsalted dry-roasted peanuts |
1- Mix the chicken with 1-tablespoon soy sauce and 1-tablespoon cornstarch in a bowl until the cornstarch dissolved.
2- Mix the hoisin sauce, sugar, 1-tablespoon soy sauce, and 1-tablespoon cornstarch in another bowl until the cornstarch and sugar dissolved.
3- Heat a large skillet over high heat add the oil and wait until it is hot, add the chicken and stir-fry until no longer pink for 3 minutes.
4- Add the garlic, white scallions, green pepper and ginger, stir-fry for about 1 minute.
5- Finally pour the sauce mix and roasted peanuts, stir and cook for another 2 minutes, transfer to a serving plate, sprinkle the scallion greens on top, and serve.
