About this Recipe

Creamy mashed potatoes spiked with fresh green onions topped with a sweet sticky, finger-licking chicken drumstick.

Ingredients

STICKY CHICKEN:
.5 cup (125 mL) Honey
2 tbsp (30 mL) Lemon juice
1 tsp (5 mL) Sesame oil
1 tsp (5 mL) Lemon pepper
2 Cloves garlic, minced
2 tbsp (30 mL) Soy sauce
Salt and pepper
1 Package Maple Leaf Prime Naturally® Skinless Chicken Drumsticks
SPRING ONION MASH:
4 Potatoes, peeled and quartered
1 cup (250 mL) Milk or cream
.25 cup (60 mL) Butter
4 Spring onions, sliced
Salt to taste

Directions

STICKY CHICKEN:
PREHEAT oven to 350°F (180°C).

COMBINE ingredients, except chicken, in a large bowl. Add chicken and toss to coat. Arrange chicken on a parchment lined baking sheet and cover with aluminum foil. Bake in preheated oven for 20 minutes. Remove foil and bake another 20 minutes or until internal temperature has reached 185°F (85°C).

SPRING ONION MASH:
COOK potatoes in a large pot of boiling, salted water until fork tender. Drain and return to the pot. Mash potatoes and set aside.

BRING milk and butter to a simmer in a small pot. Add onions. Stir mixture into potatoes. Season with salt and serve with chicken.
