About this Recipe

This delicious sandwich is simple and satisfying. Celebrate this special day with some greens in your breakfast.

Ingredients

1 Dempster's English Muffin-toasted
1 free range egg-beaten
5 fresh spinach leaves-finely chopped
1 mushrom-finely chopped
1 pinch salt
1 turn of a pepper mill
1 slice of cheddar cheese
2 tsp soft butter

Directions

Toast English muffin halves. Spray or butter a small ramekin. Chop vegetables. Beat egg in a bowl and add vegetables, salt and pepper, mix together. Pour mix into the greased ramekin. Cook in microwave for 40 seconds or until cooked through. Butter inside of English muffin halves. Place cooked egg on to bottom half of English muffin, place slice cheese on top of egg, and top half of English muffin. Microwave for 25 seconds or until cheese melts. Take out of microwave, Enjoy!
