This simple recipe is packed with flavour, there is nothing like great ribs you make yourself.


1 Rack Maple Leaf Prime® Pork St. Louis Side Ribs
.25 cup (60 mL) Hot sauce
.5 cup (125 mL) Brown sugar
2 tsp (10 mL) Salt
1 cup (250 mL) Ready prepared BBQ sauce
2 tbsp (30 mL) Worcestershire sauce
1 tbsp (15 mL) Horseradish
1 tbsp (15 mL) Hot sauce


PREHEAT oven to 325°F (160°F). Remove the membrane from the back of the ribs by gently peeling and pulling it off.

CUT rib racks in half or into desired portions and place in a 9x13” (3.5 L) rectangular baking pan.

STIR together the hot sauce, brown sugar and salt and pour over the ribs along with ½ cup (125 mL) of water. Cover with aluminum foil and bake for 2 hours or until tender but not falling apart. Remove from the oven and cool enough to handle. Transfer to a baking sheet and set aside.

TRANSFER ½ cup (125 mL) of the cooking liquid from the baking dish to a small bowl. Add all of the ingredients for the BBQ sauce to the liquid and whisk together.

PREHEAT BBQ to medium. Lightly coat the grill with non-stick cooking spray. Cut the ribs into 2 bone portions. Baste the ribs liberally with sauce and place on the grill. Cook 3-5 minutes per side basting occasionally. Take care not to burn.

PREHEAT broiler to medium-high. Arrange the ribs on a baking sheet lined with a metal rack. Brush ribs liberally with BBQ sauce. Turn and baste until char-grilled and heated through.
