This Spicy Frittata Whole Wheat wrap is filled with fluffy ricotta protein packed eggs, juicy tomatoes, sweet and spicy red peppers enveloped in fragrant herbs. Fast, easy and nutritious this protein packed meal can be made in a pinch when you come home from a long day. Breakfast for Dinner!

Ingredients

1 lg. egg
1 tsp each crushed garlic, capers
1 tbsp each red bell pepper and hot pepper rings, drained
1/4 cup diced zucchini
1 tbsp ricotta
1 tbsp Extra Virgin Olive Oil
1/2 cup fresh arugula leaves
1 tbsp each chopped parsley and basil leaves
1 Dempsters Whole Wheat Tortilla
1 pinch of salt

Directions

In preheated skillet, add the oil and saute the zucchini, red bell pepper, garlic and capers until softened, approx. 5 min on medium high heat.
Meanwhile whisk egg, with ricotta, salt and herbs. (Ricotta makes the eggs fluffy).
Gently pour over cooked vegetables. Do not stir.
Reduce heat to a simmer, and cook for 3 min on medium low heat. Lift the sides occasionally to allow the uncooked egg to run underneath. Distribute the hot pepper rings over the eggs.
When the bottom of the frittata is fully cooked flip the frittata over.
Continue to cook the other side for 2 min.
Place into a toasted tortilla wrap, top with spicy peppers and arugula.
Roll tightly and slice in half.
*Place Tortilla into a large dry preheated skillet, toast both sides for a few seconds. Set aside.
