This deliciously savoury dish is deceivingly easy to prepare. It looks and tastes like gourmet, but in less than 30 minutes, dinner is ready!
|1||Package Maple Leaf Prime Naturally® Thin Slice Chicken Breasts|
|Salt and pepper|
|2 tbsp||(30 mL) Butter|
|2 tbsp||(30 mL) Olive oil|
|2||Cloves garlic, minced|
|1||(8 oz/227 g) Package sliced mushrooms|
|3 cups||(750 mL) Packed baby spinach|
|2 tsp||(10 mL) Chopped fresh herbs (rosemary, thyme, parsley), optional|
|1 cup||(250 mL) Grated Gruyere or Swiss cheese|
SEASON the chicken on both sides with salt and pepper.
HEAT 1 tbsp (15 mL) each, of butter and olive oil in a large skillet over medium-high. Add chicken and cook for 3-4 minutes per side or until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove from the pan and keep warm.
Heat the remaining olive oil and butter in the same pan until frothy. Add the mushrooms and cook, stirring for 6-7 minutes or until browned. Add garlic and continue to cook for 1-2 minutes. Add spinach and cook until wilted. Season to taste with salt and pepper. Toss in herbs and stir to combine.
PREHEAT broiler to high. Arrange the chicken on a parchment lined baking sheet. Top with mushroom and spinach mixture, dividing equally. Sprinkle with cheese and broil for 2-3 minutes or until cheese is hot and bubbly. Serve hot with your favourite side dish.
