A fusion between the Italian frittata and the Spanish potato tortilla. This yummy recipe can be served any time of day.
|1||100g Maple Leaf® Sausage Meat|
|3 tbsp||(45 mL) Olive oil, divided|
|2||Onions, thinly sliced|
|1 lb||(500 g) New potatoes, cooked, sliced|
|Salt and pepper|
|Chopped fresh parsley|
HEAT 1 tbsp (15 mL) oil in a large fry pan over medium heat. Add sausage and cook 3-5 minutes or until nicely browned. Remove from pan with a slotted spoon and set aside.
ADD remaining oil to the same pan. Add onions. Cook over medium-low for 10-12 minutes or until golden and caramelized.
PREHEAT broiler to high.
ADD sausage back to the pan along with cooked potatoes. Gently stir to combine. Reduce heat to medium-low. Pour in beaten eggs, seasoned with salt and pepper. Cook over medium- low for 5-6 minutes or until eggs are almost set. Place under broiler for 2-4 minutes or until top is completely set and beginning to turn brown. Sprinkle with parsley and serve, cut into pie shaped slices.
