An amazing and delicious low-carb Italian sausage roll that everyone will love!
|2 lbs||Bacon (25 slices)|
|16 oz||Hot Italian sausage|
|1 Pkg||Dry cured pepperoni|
|4 oz||Mozzarella cheese|
|4 oz||Cheddar cheese|
Make the inner bacon weave: make a 5x6 slice weave and cook in the oven at 400°F for 10 mins (should be cooked but not quite crispy).
Roll the sausage into a rectangle on plastic wrap. Add some oregano. Add a layer of pepperoni. Remove your bacon from the oven and add the bacon weave on top of the pepperoni. Add your cheese slices. Then, using the plastic wrap, roll it all up as tightly as possible. Wrap it tightly in the plastic wrap and put it in the freezer.
Make the outer bacon weave: make a 7x7 slice weave on plastic wrap. Remove the log from the freezer and roll it diagonally, again using the plastic wrap. Make it tight, put on a wired rack, and cook at 400°F for approx 1 hour.
