This is an easy way to spice up your dinner routine! Simply combine cumin, chili powder and chopped red onion to create these Spicy Herb Potato Wedges!
|2 tbsp||(30 mL) Olive oil|
|1 tsp||(5 mL) Chopped garlic|
|.25 cup||(50 mL) Finely chopped red onion|
|.5 tsp||(2 mL) Chili powder|
|.5 tsp||(2 mL) Cumin|
|.5 tsp||(2 mL) Dried basil or thyme|
|2 tbsp||(30 mL) Chopped fresh parsley|
|Salt and pepper to taste|
|2||Large baking potatoes|
COMBINE oil, garlic and onion in a 9-inch (2.5L) square glass baking dish.
MICROWAVE on HIGH for 1 to 2 minutes or until onion is softened, stirring occasionally. Stir in chili powder, cumin, basil, parsley, salt and pepper.
WASH and scrub potatoes. Halve lengthwise and cut each half into 4 wedges. Add to baking dish; toss to coat evenly.
COVER with microwave-safe plastic wrap, venting one corner, microwave on HIGH for 8 to 10 minutes or until potato wedges are fork tender, stirring once during cook time.
