Smoked Chicken sausage adds a subtle flavor to this light Summer BBQ
Kofta that's fast and easy to make and can be made ahead, leaving the cook to enjoy the Partay!!!


1 lb ML Prime ground Chicken or Turkey
1 Pkg JMS Chicken Smoked Sausage, Spicy Jalapeno
2 lg. eggs
1/2 cup seasoned bread crumbs
1 jalapeno, minced
1 tbsp rosemary, chopped
1 tsp each salt and pepper
1 tomato, diced
1 cup papaya, diced
1/2 green pepper, diced
3 tbsp balsamic vinegar
1 tbsp peanut oil or your fave
1 mango, diced
2 tbsp cilantro
1/2 onion, diced
1 pinch of salt
6 -8 Wooden Skewers


Make a slit through the casing of each sausage. Squeeze out the meat into a large mixing bowl. To the bowl add, the ground chicken, bread crumbs, jalapeno, rosemary, onion, eggs and 1 tsp of salt and pepper.
Mix with your hands until combined well.
(You can refrigerate at this point up to 2 days)
Begin to shape around mixture around a skewer to the shape of a large sausage. Squeeze mixture firmly to shape and form, leaving no air.
Continue until all skewers are formed.
Place each Kofta on a preheated oiled BBQ grill. Cook for 15-20 min turning to cook on all sides.

Tropical Salsa
Place remaining ingredients into a bowl. Mix to marinate. Serve room temp. or cold.
Spoon over lettuce and Kofta
