1 Maple Leaf Prime Naturally® Whole Chicken
2 tbsp (30 mL) Smoked paprika
1/2 tsp (2 mL) Salt
2 tsp (10 mL) Garlic powder
1/2 tsp (2 mL) Cayenne pepper
2 tsp (10 mL) Italian seasoning
2 tbsp (30 mL) Olive oil


Chimichurri Sauce:
4 Cloves garlic, chopped
1 cup (250 mL) Cilantro leaves
½ cup (125 mL) Fresh mint leaves
½ cup (125 mL) Parsley
¼ cup (60 mL) White balsamic vinegar
½ cup (125 mL) Vegetable oil
Salt and pepper

PREHEAT oven to 375˚F (190˚C).

PLACE chicken on a cutting board. Cut along both sides of the back bone in the chicken and remove it. Place the chicken skin side up on cutting board. Press down flat and cut in half between the breasts, using a sharp knife.

COMBINE all the spice rub spices in a small bowl. Rub the chicken all over with olive oil and spice mixture. Using your fingers, loosen the skin and rub the spice mix under the skin. Place chicken halves in a large baking dish and roast in preheated oven for 45 minutes to 1 hour or until the internal temperature reaches 185˚F (85˚C).

Chimichurri Sauce:
PLACE all ingredients in the bowl of a food processor and pulse 5-6 times or until combined but slightly chunky with herbs.

SPOON sauce over roasted chicken and enjoy!
