A quick, flavourful family favourite. Lean minced turkey, black beans and corn combined with big Mexican flavours and then topped with melted cheese.

|1 Pkg||Maple Leaf Prime Naturally® Extra Lean Minced Turkey|
|2||Cloves garlic, minced|
|1 tsp||(5 mL) Cumin|
|1/2 tsp||(2 mL) Ground coriander|
|1 tsp||(5 mL) Chili powder|
|2||Chipotles in adobo, seeded, finely chopped|
|1||(19 oz/540 mL) Can black beans|
|1 cup||(250 mL) Corn|
|4 cups||(1 L) Salsa, divided|
|3/4 cup||(175 mL) Sour cream|
|1 tsp||(5 mL) Lime juice|
|Dash hot sauce, optional|
|Salt and pepper|
|1/4 cup||(60 mL) Chopped fresh cilantro, optional|
|12||Dempster’s® Corn Tortillas|
|1 cup||(250 mL) Tex Mex Grated cheese|
PREHEAT oven to 350˚F (180˚C). Lightly coat two 9” X 13” (3.5 L) rectangle baking dishes with non stick cooking spray.
HEAT oil in a large skillet over medium heat. Add turkey and cook 8-10 minutes or until browned. Add onion and garlic. Sauté 1-2 minutes or until fragrant. Add cumin, coriander, oregano and chili powder. Cook 1 minute, stirring. Add chipotles, black beans, corn, 1 ½ cups (375 mL) salsa, sour cream, lime juice and hot sauce if desired. Season with salt and pepper. Stir to combine. Remove from the heat.
SPOON a layer of salsa into the bottom of each prepared baking pan.
LAY tortillas on a clean flat work surface. Place ½ cup (125 mL) filling in the middle of each tortillas and roll into an enchilada. Place enchiladas into the prepared baking dishes. Pour remaining salsa over enchiladas and sprinkle with cheese. Bake in preheated oven for 15 minutes or until cheese is bubbly.
