This latin inspired stuffing is bursting with flavor, great for an ethnic inspired holiday meal!
|1 Pkg||Schneider’s Country Naturals Hot Italian Sausage, casing removed|
|1 tbsp||Spanish paprika|
|1||small red pepper diced|
|1 8oz Pkg||mushrooms, chopped|
|1||loaf sour dough bread, cubed|
|1/2 cup||butter, melted|
|3/4 cup||chicken stock|
|Salt and pepper|
|1/2 cup||manchego cheese, grated|
|1/2 cup||old cheddar cheese, grated|
Heat oven to 400 degrees.
Heat a large skillet over medium high heat. Cook sausage breaking apart with the back of a wooden spoon for about 6 to 7 minutes. Add in paprika, onion, red pepper and mushrooms. Cook until vegetables are starting to soften, about 5 minutes. Remove from heat and allow to cool. Place bread in a large bowl. Add sausage mixture and melted butter. Using your hand incorporate mixture well. Slowly pour in chicken stock until mixture is moistened well. Season with salt and pepper. Lightly spray and 8”x8” casserole dish. Press stuffing mixture into dish. Cover with tin foil. Bake for about 30 minutes. Remove foil and top with cheese. Cook for 10 to 15 minutes longer until cheese is bubbling and browned. Garnish with chives.
