Classic Spanish inspired chicken cooked with pimento peppers for a sweet and fiery taste!
|1||Maple Leaf® Prime® Naturally Whole Chicken, cut into 8 pieces|
|2||Cloves garlic, minced|
|1 tsp||(5 mL) Salt|
|2 tbsp||(30 mL) Olive oil|
|1||Large onion, chopped|
|2||(4 oz/113 g) Jars pimento peppers|
|1 cup||(250 mL) Dry white wine|
RUB chicken all over with garlic, salt and pepper. Cover and refrigerate for one hour.
HEAT oil over medium-high heat in a pot large enough to hold chicken in one layer for final cooking. Working in batches, add chicken and cook 5-6 minutes per side or until golden brown. Remove from pot and set aside.
ADD onions to same pot and cook, stirring occasionally for 9-10 minutes or until soft. Add pimentos and wine. Return chicken to the pot and bring to a boil. Lower heat to medium-low, partially cover and simmer gently for 45 minutes to an hour or until chicken is very tender and a minimum internal temperature of 185°F (85°C) has been reached. Adjust seasoning to taste.
Serve with roasted potatoes or French fries
