A hearty meal for any time of day, flavoured with fresh nutmeg, ripe pepper and smoked ham.
|1-2 tbsp||(15-30 mL) Olive oil|
|1||Medium onion, sliced|
|2||Cloves garlic, minced|
|1||Schneiders® Olde Fashioned Smoked Ham Steak, diced|
|1||Red pepper, sliced|
|1||Yellow pepper, sliced|
|Salt and pepper|
|¼ cup||(60 mL) Milk|
|Pinch ground nutmeg|
HEAT 1 tbsp (15 mL) oil in a 9 inch (23 cm) non-stick, oven-proof skillet over medium-high heat. Sauté onion, garlic and ham until onion is translucent. Add peppers and continue cooking, adding more oil if required, until peppers are tender. Season with salt and pepper. Remove from pan and set aside. Reduce burner heat to low.
BEAT eggs, milk and nutmeg in a medium bowl. Pour into pan and cook over low heat until eggs are partially set. Spread pepper mixture evenly over eggs. Place under broiler for 1-2 minutes or until eggs are completely set.
