The perfect brunch sandwich. Sweet and smokey Spanish flavors in a sandwich!
|1/4 cup||(60 mL) Olive oil|
|1||Small red onion, sliced|
|1||Cold, cooked potato, sliced|
|1||Schneiders® Country Naturals® Hot & Spicy Smoked Sausage, chopped|
|1/2||Red pepper, sliced|
|1||Clove garlic, minced|
|1/2 tsp||(2 mL) Smoked paprika|
|1/4 cup||(60 mL) Chopped fresh parsley|
|Salt and pepper|
|1/2 cup||(125 mL) Grated Cheddar cheese|
|8||Slices Dempster’s® WholeGrains™ 12 Grain Bread, toasted and buttered|
|2||Small tomatoes, sliced|
|1 cup||(250 mL) Arugula|
HEAT oil in a 9” (23 cm) frying pan over medium-high heat. Add onion and sauté for 3-4 minutes or until soft. Add potatoes and fry until golden. Add sausage, peppers, garlic, paprika and parsley. Stir to combine, add eggs and lower heat to medium. Season with salt and pepper. Cook until eggs are set, stirring occasionally to prevent sticking. Sprinkle cheese over top and broil on high for 1-2 minutes or until cheese is bubbly and golden.
TRANSFER frittata to a cutting board and cut into 4 pieces. Serve each piece between two slices of buttered toast, topped with tomato and arugula. Season with salt and pepper to taste.
