Mac and Cheese Move Over! Just a few simple ingredients for this creamy and delicious summer pasta. Beautiful fresh colours too.
|1/2 lb||(225 g) Spaghettini or your favourite pasta|
|1/4 cup||(60 mL) Olive oil|
|4||Cloves garlic, thinly sliced|
|2||Anchovy fillets, drained (optional)|
|3||Medium ripe tomatoes, roughly chopped|
|Salt and pepper|
|1||(400 g) Package Maple Leaf® Prime® Fully Cooked and Sliced Chicken Breast Strips|
|6 oz||(170 g) Brie cheese, roughly chopped|
|1 tbsp||(15 mL) Chopped fresh basil leaves|
COOK pasta in plenty of boiling salted water for about 9 minutes or until al dente. Drain well and reserve 1 cup (250 mL) of the pasta water.
MEANWHILE heat olive oil in a large skillet over medium. Add anchovies if using and garlic. Cook, stirring often until anchovies have broken down and garlic is soft.
ADD tomatoes. Season with salt and pepper and cook for 8-10 minutes until the tomatoes are very soft. Stir in chicken strips and brie. Add the pasta and pasta water, ¼ cup (60 mL) at a time to loosen the sauce to the desired consistency.
SERVE sprinkled with fresh basil.
