A refreshing salad to enjoy juicy leftover turkey.


1 cup Maple Leaf Prime� Whole - Canada A - Young Turkey
cooked and diced (leftover)
2 green peppers
sliced in half and hollowed out
1/2 cup shredded carrots
1/2 cup brocolli florets
12 cherry tomatoes
sliced in half
1 cup mayonnaise
1 tbsp lime juice
2 tsp sugar
1 tsp paprika
1 tsp white vinegar
1 tsp water
1/2 tsp salt
1/2 tsp garlic powder
1 tsp ground chipotle chilli
1/4 tsp thyme
1/4 tsp cumin


Combine diced turkey, carrots, broccoli, and cherry tomatoes in a medium-sized bowl. Chill in refrigerator.

Prepare Southwest Sauce:
Combine mayonnaise and remaining ingredients in a medium-size bowl, chill at least one hour before serving.

Spoon turkey mixture inside each half of green pepper. Drizzle southwest sauce on top, and serve.
