Smooth, creamy and delicious mashed potatoes with green onion. A perfect compliment to any dish.
|2||Large potatoes, peeled and diced|
|1/2-1/3 cup||(80-125 mL) Milk|
|2 tbsp||(30 mL) Butter|
|1/4 cup||(60 mL) Cream cheese|
|1/4 cup||(60 mL) Sour cream|
|2||Green onions, thinly sliced|
COOK potatoes in a large pot of salted water until fork tender. Drain and return to the same pot.
HEAT milk and butter to a simmer in a small saucepan. Pour the mixture over the potatoes. Add cream cheese and sour cream. Mash the potatoes using an electric hand mixer until creamy and smooth. Stir in green onions, season to taste with salt and pepper and serve.
