Smoky sundried mild sausage adds full flavor to this easy anytime meal loaded with vegetables and is a complete nutritional low fat one dish meal ready in 15 minutes!
|1 Pkg||Schnieiders JMS Sundried Tomato Chicken Sausage, sliced into 3inch pieces|
|1/2||each sliced green and red peppers|
|1 cup||mushrooms, sliced|
|1||onion, sliced thinly|
|500 g||pkg. penne pasta|
|1 tsp||salt plus more for the pasta water|
|3 tbsp||extra virgin olive oil plus more for drizzling|
|3 tbsp||chopped chives|
|1/2 cup||white wine|
|shaved parmesan cheese|
Bring a large pot of 3/4 full salted water to a boil. Drop in pasta when it comes to a boil. Stir to prevent sticking. Cook until al dente.
Meanwhile pour the oil into a medium sized skillet and preheat, add the sausage.
Brown on both sides until golden brown. (Take your time to do this as it caramelizes and adds added flavor and colour to your finished dish).
Add the white wine, reduce it to half, while continuing to stir and cook.
Add the remaining vegetables, salt and continue to cook until vegetables are softened on medium high heat.
Drain pasta reserving a bit of the water in the pot as this will mix with the sauce.
Add the pan ingredients into the hot pasta, mix.
Sprinkle with cheese, chives and a drizzle of extra oil.
